(opens in a new tab)\">Ouvrir en PDF. <\/a><\/p>\n\n\n\n<p>Une \u00e9mulsion est un m\u00e9lange dispersif microscopique de deux solutions non miscibles&nbsp;:<\/p>\n\n\n\n<ul><li>une solution aqueuse (eau +solut\u00e9), Hydrophile&nbsp;:&nbsp;<strong>H<\/strong>,<\/li><li>une solution lipidique (huile (s)), Lipophile&nbsp;:&nbsp;<strong>L<\/strong>.<\/li><\/ul>\n\n\n\n<p>Une \u00e9mulsion est qualifi\u00e9 de&nbsp;:<\/p>\n\n\n\n<ul><li><strong>L\/H<\/strong>(Lipophile dans Hydrophile) si la phase Lipophile est dispers\u00e9e dans la phase Hydrophile (des gouttelettes lipidiques baignent dans l\u2019eau),<\/li><li><strong>H\/L<\/strong>(Hydrophile dans Lipophile) si la phase Hydrophile est dispers\u00e9e dans la phase Lipophile (des gouttelettes d\u2019eau baignent dans de l\u2019huile).<\/li><\/ul>\n\n\n\n<p><strong>1- Produits test\u00e9s par ce contr\u00f4le&nbsp;:<\/strong><\/p>\n\n\n\n<p>Toutes les \u00e9mulsions&nbsp;: cr\u00e8mes, pommades, mayonnaises, vinaigrettes\u2026\u2026.<\/p>\n\n\n\n<p>Deux techniques de d\u00e9termination du sens de l\u2019\u00e9mulsion existent&nbsp;:<\/p>\n\n\n\n<ul><li>m\u00e9thode par dilution aqueuse,<\/li><li>m\u00e9thode des colorants (pr\u00e9f\u00e9rer cette m\u00e9thode).<\/li><\/ul>\n\n\n\n<p><strong>2- D\u00e9termination du sens d\u2019une \u00e9mulsion&nbsp;: m\u00e9thode par dilution.<\/strong><\/p>\n\n\n\n<p><strong>2-1&nbsp;: Mat\u00e9riel n\u00e9cessaire \u00e0 la r\u00e9alisation du contr\u00f4le&nbsp;:<\/strong><\/p>\n\n\n\n<ul><li>Balance,<\/li><li>Verre de montre,<\/li><li>Eau distill\u00e9e,<\/li><li>1 g de produit \u00e0 tester.<\/li><\/ul>\n\n\n\n<p><strong>2-2&nbsp;: Mode op\u00e9ratoire&nbsp;:<\/strong><\/p>\n\n\n\n<ul><li>Dans un verre de montre propre et sec, d\u00e9poser 1 g d\u2019\u00e9mulsion \u00e0 tester,<\/li><li>Ajouter 1 g d\u2019eau distill\u00e9e.<\/li><li>M\u00e9langer.<\/li><li>Observer l\u2019aspect du produit.<\/li><\/ul>\n\n\n\n<p><strong>2-3&nbsp;: Expression et analyse des r\u00e9sultats&nbsp;:<\/strong><\/p>\n\n\n\n<ul><li>Le m\u00e9lange reste homog\u00e8ne, l\u2019\u00e9mulsion est du type&nbsp;<strong>L\/H<\/strong>.<\/li><li>Le m\u00e9lange devient h\u00e9t\u00e9rog\u00e8ne, l\u2019\u00e9mulsion est du type&nbsp;<strong>H\/L<\/strong>.<\/li><\/ul>\n\n\n\n<p><strong>3- D\u00e9termination du sens d\u2019une \u00e9mulsion&nbsp;: m\u00e9thode des colorants..<\/strong><\/p>\n\n\n\n<p><strong>3-1&nbsp;: Mat\u00e9riel n\u00e9cessaire \u00e0 la r\u00e9alisation du contr\u00f4le&nbsp;:<\/strong><\/p>\n\n\n\n<ul><li>Balance,<\/li><li>2 verres de montre,<\/li><li>2 lames et 2 lamelles,<\/li><li>Microscope,<\/li><li>Flacon de bleu de m\u00e9thyl\u00e8ne (Colorant aqueux, miscible que dans une phase Hydrophile),<\/li><li>Rouge Soudan en poudre (Colorant lipidique, miscible que dans une phase Lipophile) + spatule.<\/li><li>1 g de produit \u00e0 tester.<\/li><\/ul>\n\n\n\n<p><strong>3-2&nbsp;: Mode op\u00e9ratoire&nbsp;:<\/strong><\/p>\n\n\n\n<ul><li>Dans chacun des verres de montre, d\u00e9poser 1 g d\u2019\u00e9mulsion \u00e0 tester,<\/li><li>Dans un des verres de montre, ajouter une goutte de bleu de m\u00e9thyl\u00e8ne, m\u00e9langer.<\/li><li>Dans l\u2019autre verre de montre, ajouter une&nbsp;minusculepointe de spatule de rouge soudan, m\u00e9langer.<\/li><li>Monter chaque m\u00e9lange entre lame et lamelle.<\/li><li>Observer au microscope \u00e0 l\u2019objectif x 10 puis x 40.<\/li><\/ul>\n\n\n\n<p><strong>3-3&nbsp;: Expression et analyse des r\u00e9sultats&nbsp;:<\/strong><\/p>\n\n\n\n<p><em>Attention les r\u00e9sultats des deux observations doivent \u00eatre coh\u00e9rents.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"770\" height=\"271\" src=\"https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1.png\" alt=\"\" class=\"wp-image-886\" srcset=\"https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1.png 770w, https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1-300x106.png 300w, https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1-768x270.png 768w, https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1-150x53.png 150w, https:\/\/portail.stpaul4.ac-reunion.fr\/wordpress\/process\/files\/2020\/07\/PF02-im1-250x88.png 250w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>Ouvrir en PDF.
